Wow, the next to last one of the month! Today’s brew is one that is from the R&D lab @dogfishhead in Milton, DE. “Tepache” is a crisp and light 4.1% ABV sessionable kettle sour brewed with pineapple, cinnamon and panela sugar. Dogfish Head has a long history of exploring the goodness found in the foods and drinks of the ancient past and that journey continues today with Tepache. Tepache is an indigienous Mexican pineapple-based beverage dating from the pre-Columbian era. While the earliest versions produced by the Nahua people were made from fementing corn, the contemporary versions are created by fermenting pineapple skins. The fruit skins undergo a wild fermentation yielding a low-alcohol, tart and refreshing drink that is then spiced with cinnamon and sweetned with piloncillo or brown sugar. Often it is blended with a little beer as a sort of tropical shandy.
